 Here is a simple and delicious veg plate recipe:


Ingredients 


1 cup cooked brown rice


1 cup mixed vegetables (carrots, peas, corn, beans)


1/2 cup paneer (cottage cheese) cubes


1/2 tsp cumin seeds


1/2 tsp turmeric powder


1/2 tsp red chili powder


1/2 tsp garam masala powder


Salt to taste


1 tbsp oil

Instructions




  • Heat oil in a pan and add cumin seeds. Let them splutter.


  • Add mixed vegetables and paneer cubes. Stir-fry for 2-3 minutes.


  • Add turmeric powder, red chili powder, garam masala powder and salt. Mix well.


  • Cover and cook for 5-7 minutes or until vegetables are cooked.


  • Serve hot with brown rice.


  • You can also add a side salad or raita (yogurt with spices and vegetables) to complete your veg plate meal.
